Caramel is my biggest weakness! I can’t resist the temptation to order it if it’s there in any restaurant menu. This healthier version is so easy to pull together in seconds, and it helped me a lot in my journey to overcome that unnecessary craving. Grilling the pears makes them soft and warm, and the fresh honeyed ricotta adds another dimension of greatness to this plate. You got to try it!

INGREDIENTS
4 pears
¾ cup ricotta cheese
Zest of 1 lemon
Pinch of cinnamon
½ cup tahini
1 cup honey
1 tsp vanilla extract
Olive oil
Sea salt
GUIDE / INSTRUCTIONS
Cut the pears in quarters and remove the core and seeds.
Heat a pan over medium heat and add a drizzle of olive oil.
Place the pears in the pan and cook for 5 minutes or until tender. Be careful to turn them over and check they are not burning.
Let’s make a ricotta cheese sauce while the pears are getting cooked. In a bowl, combine the ricotta, lemon zest, 2 tbsp honey, and cinnamon. Mix well.
Let’s make the tahini caramel in another medium bowl. Mix the tahini, ½ cup honey, salt (as per taste) and vanilla. Combine well with a spoon and taste to check if it needs extra salt.
In the serving plate, place the grilled pears hot from the pan, with a good amount of the ricotta mixture and a generous drizzle of the tahini caramel.
